Here's an article about 00 flour and pasta..."cooks in the United States sometimes substitute a mix of low-protein cake flour and all-purpose flour for the 00 flour called for in a pasta recipe. "

According to Fine Cooking Magazine, all-purpose flour will work... "Italians use a very fine flour called "00" in pasta dough, but all-purpose works well, too."

In the US, King Arthur Flour has an 00 flour.
