If you want a milder burger, try provalone, mozzarella, cheddar-jack or a mild cheddar. If you want something with a little more kick, try a sharp cheddar or a pepperjack, or even parmesan. Experiment. Try two different cheeses together.
If you want to try something different that really integrates the cheese into the burger, shred the cheese you're going to use beforehand and mix it into the hamburger, and then grill it. If you want to use something 'pre-cut' you could also try cottage cheese in the burger this way. I've had the shredded version and it really changes the taste into something flavorful. It also adds a bit of soft if you overcook.
Basically though, it should just be a cheese you like to eat plain. No use in ruining a burger with something you've never sampled before.
