How long shoujld you keep the oil in your deep frier?
My dad makes french fries and he keeps the oil for MONTHS. he says since it get's to 400 degrees it kills all the germs and it's ok, but I'm wondering if he's right because he tends to be a bit of an idiot sometimes, any imput?

Bacteria is not the issue. You can reuse oil many times as long as you filter out the little bits left behind each time. Discard oil when it begins to foam or smoke at low temperature. Old oil will only make your food taste bad, also makes a mess when it foams over, but generally will not hurt you.
