Why does Haloumi cheese not melt when it is cooked?


Answers:

It has a higher melting point due to the fresh cheese curds being cured and then put into a brine.

EDIT:
To the previous answer, it is Greek cheese sometimes made with goat's and sheep's milk, but commercial brands are made with mostly cow's milk. It does not melt, it goes soft when fried, and used in Greek dishes and salads. It is very salty as well.
