Freezing fruit and veg from garden?!

Question:

Freezing fruit and veg from garden?

Advice please on the best way to freeze the excess from the garden that is more than we can eat fresh.

Specifically I'm looking at runner beans, tomatoes, rhubarb and plums. Thanks

Answers:

Hello!

Rhubarb - First wash the stalks, cut them into slices around 1/2 inch or so, put them on a cookie sheet, and freeze. Once frozen, repackage the slices into plastic bags (tightly) and keep them stored in the freezer. (Freezing right away in bags causes the rhubarb to stick together)

Runner beans - First blanch them, then shock immediately afterwards. Put them in bags, containers, etc. and freeze ASAP.

Tomatoes - Chop them up into chunks or small pieces, and put in bags. Freeze. (If you want to freeze them without skins, lower them in boiling water for 2 minutes, peel skins, then follow steps as shown.)

Plums - If you would like to preserve your fruit, this site has a simple method: http://www.uga.edu/nchfp/how/freeze/plum...
The preferred method for freezing plums is to first cook them in a syrup. The rhubarb method would work fine, as well.
