Baked Alaska

For the baked Alaska
4 slices ready-made madeira cake
4 scoops ready-made vanilla ice cream
4 free-range egg whites
75g/2?oz caster sugar
To serve
handful raspberries

Method
1. Place the cake slices onto a heatproof plate and place the ice cream on top.
2. Place the egg whites into a large, clean bowl and whisk until stiff peaks form when the whisk is removed. Add the sugar to the bowl and briefly whisk again until glossy.
3. Spread the meringue mixture over the cake and ice cream base.
4. Brown the outside of the meringue using a mini-blowtorch until golden-brown.
5. To serve, place some raspberries around the baked Alaska.
