Since bagged vegetables have an early expiration date, is it still OK to eat them 2 months later?

I have carrots that I bought 2 weeks ago, & today is the expiration date. I'm afraid that I bought all those fruits & vegetables for nothing because I think it's gonna go to waste.


Answers:

Maybe they aren't rancid, but with Fruits and Vegetables, their nutrients and texture are largely depleted over time. Thus, bargain bins at the supermarket with post-dated items are mostly a complete waste of money, because whatever vitamins that were once in them are lost.
