When buying Jalapenos, what do you look for?!

When buying Jalapenos, what do you look for?

I've seen several different types.
Some are huge and smooth.
Some are smaller and wrinkled.

Is there a difference in heat?

My husband is a graduate of UC Davis' Agriculture program. He has grown many chili varieties from all over the world. You can find his bio at http://www.nectaroflife.com/about-us.htm... Green Jalapenos have the hottest flesh if they have some vein stripping on the outside. The heat is most intense at the cap end around the seeds.

If they are small and wrinkled it means:
A) They weren't grown with enough water, and although the capsactian is more concentrated, I don't think they are better.
B) They are mismatched and the store put another pepper in there.

Check around, purchase firm, dark green, slightly vein fruit.
