Question:

When Guacamole has a fizzy taste and feel to it does that mean it is rancid?

Several times this has happened and each time it does I throw away the food in question or return it to the kitchen if I am at a restuarant, but is that necessary? Could it be that different recipes for guacamole have ingredients that might cause it to fizz?


Answers:

ever put a 9v (square) battery to your tongue to see if it works? Same thing. Guac. has lemon or lime juice in the recipe. When it is stored in a stainless steel container, ones that most restaurants use, the citris creates a " battery acid" taste to it if left for too long.. This is a way that chefs like myself test products on a daily basis. If it tingles on your tongue, its no good. Maybe you shouldn't go to this restaurant anymore?
