Why does guacamole turn darker the next day even after being refrigerated? How long is it good for?

If you keep guacamole refrigerated in a covered container, why does it turn darker the next day? And is it still good? For how long?


Answers:

Because the avocado is exposed to oxygen and it oxydizes.

You can prevent this by covering your guacamole with plastic wrap that is pushed right down on top of the guacamole.

For homemade guacamole, I'd be suspicious after 3 days, and toss it without regard to looks after seven days. Commercially prepared guacamole might last a day or two longer, but I'd be leary of anything that has been opened and in the frige for more than a week.
