Whats the difference between baking chocolate and semi-sweet chocolate?


Answers:

baking chocolate tends to be more bitter - although for the real quality chocolate needed in serious desserts, I would recommend going with the highest cocoa solids you can find - 70% is the benchmark. there tends to be more sugar in sweet chocolate - which you need to factor in when a recipe calls for the addition of sugar.

I'd stick with green and blacks - not cheap for mass baking, but good quality.
