Cream - single, double, heavy, whipping?!


Question:

Cream - single, double, heavy, whipping?

What is the difference?!? I was watching a british cooking show and they were using double cream. And in the store here (US), there is light, heavy and whipping. Can you explain what the difference is??? (I at least know what "sour" cream is! :)

Answers:

Double cream has a higher fat content than the heavy whipping cream you can find in the US. This makes it very thick and creamy and very versatile for both sweet and savory dishes. It is not to be confused with Clotted or Devonshire creams which are long-life creams. Double cream is a fresh cream and is not available in the US (unfortunately, since it is the most delicious!).
