Why is 'evaporated milk' called that?!

Why is 'evaporated milk' called that?

Surely 'evaporated' means gone does it not?


Answers:

Evaporated means the water has gone or been reduced from it - kind of like reducing a stock or sauce so the flavour is more intense. It gives a much creamier texture and taste, as well as preserving the milk.

It's good to use as a substitute for cream if you are trying to reduce your fat intake.
