Why do my pasta sheets always burn?
basically, when i buy my pasta sheets to make my lasagna i soak them in warm water before i put them onto of the fliing in the lasagna, but when i remove the dish from the oven, the sides of the sheets always seem to be crispy and burnt and ruins the dish as it all seems to fall appart as i remove it. any tips on how to get the pasta really soft and easy to cut?

I make vegetarian lasagne at work about once a week for the veggie option. You do not need to soak the lasagne sheets. Your oven should be around 150 degrees centigrade. Build your lasagne up in layers, beginning with a layer of meat/med veg in tomato sauce. Over this, structure your lasagne sheets by breaking some in half so you build them up like a brick wall: I think the word I'm looking for here is tessilate.
Before the sheets can curl upwards, apply a full covering of bechamel or cheese sauce which should be of coating consistency (thick enough to coat the back of a spoon).
Repeat this process (meat/med veg, lasgne sheets and white sauce) and then finish with grated cheese.
