Question:

What fish should I serve at a Black Tie Affair for 150 people? Is Halibut too risky as it may dry out?

I really want to serve Halibut, but I am worrying about it drying out. I have heard that Sea Bass is the best to serve for a large group of people b/c it has a high fat content and is difficult to dry out.

My first choice would be a Popcorn Crusted Halibut....is this too risky? Should I play it safe and go with Sea Bass?

Sea Bass. There are so many wonderful ways to go with Sea Bass. I've had Popcorn-crusted Halibut and it is not very impressive. Not only do you run the risk of it drying out, but by the time it makes it to the table, the popcorn loses its texture and appeal. It sounds better than it tastes.
