Anyone got a really good hispanic dish?

I need a recipe for my spanish class, really the only requirements are that it's vegetarian, can be made in about 45 minutes and comes from any country that speaks spanish as a primary language.

Answers:

Yes try making Arepas which are from Venezuala and Columbia.

1 cup COOKED corn meal (very important do NOT use Masa Harina which is not cooked!)
1 cup warm water
1/2 cup shreaded chese of your choice something mild is best.
pinch of salt
Oil for cooking

Mix salt, corn meal and cheese.
Add water until a dough forms
let dough rest about 5 min
Take about 3 table spoons of dough and form into balls.
Flatten dough into small "pan cakes"
Fry dough in hot oil about 6 min per side or until the cake gets lightly brown.

The outside gets kinda crispy and the inside stays moist with the cheese in there.

So dang simple and yet one of the most delicious things I have ever tasted!
