Any ideas on doing caramelised onions, I cannot get red onions or red currant jelly, what alternatives please?

I might as well ask the obvious question; Are you using a non-stick saute pan ? because if you are then caramelizing anything can be difficult
The most important thing that you need to know about caramelized onions is that they take time to do
Heat pan
add oil
add onions
cook over med -heat
flip as needed
do not add sugar
remove when completly brown -caramelized
The type of onion that you're using doesn't matter at all
What's happening is that heat is converting onion starch to onion sugar and the sugar is browning
