Why do people tenderize chicken?

what is the purpose of tenderizing chicken? does it taste differently?


Answers:

If by tenderizing it you mean marinating or brining it, it is to improve the flavor and make it more moist. If you mean pounding it flat, it is to make it cook more uniformly so that some parts aren't over cooked while other parts are undercooked (which could easily happen if there are thick parts and thin parts).
