Where can I find passata in a supermarket?


Answers: It is usually placed in the sauces, foods of the world or tinned tomatoes sections.
If your looking for it in a supermarket, Ask an assistant for help, that is what they get paid for. I dont know maybe you could make it as follows:

Passata is a cooked tomato concentrate. In the case of the recipe you refer to, which calls for a small amount, you might prefer to substitute tomato paste rather than going to the trouble of making a batch of passata.

In the meantime, one of our lovely readers has supplied her own recipe for what she assures us is a delicious cooked passata:



Passata

Ingredients:

2 or 3 oz of pancetta, chopped
1 carrot, chopped fine
1 onion, chopped fine
1 celery stalk, chopped fine
1.5 lb of boneless pork shoulder
2 Tbsp olive oil
1 cup very dry red wine
1 cup tomato sauce
1 can tomato paste

Instructions:

Blend the pancetta, carrot, onion, and celery in a food processor and mill until fully chopped.


Place the boneless pork shoulder into a pan with the olive oil, and add the mix of chopped ingredients. Add a cup of very dry red wine and a cup of tomato sauce, and cook until pork is tender and liquid reduced, about 1-1/2 hours. Remove the pork and use for anything you like.

Add 2 or 3 tablespoons of tomato paste at a time and cook until drying. Add more, and do this over and over until the entire can is incorporated.

The resulting passata will be brownish, shiny, and very concentrated, and can be used for many different dishes. It should be refrigerated in a glass container, and will keep for several weeks. Hi

I agree that home-made passata is yummy. There are some pretty good ready prepared ones too. In your local supermarket (depends on where you shop) you'll find it in the same isle/close to tinned tomatoes.

Shop-bought passata is often sold in glass jars/bottles, between 70mls/1 litre. You can also get passata in cartons.

Decent passata is a great base for lots of things, and has a richer flavour than tinned tomatoes. Also, the flavour is less acidic than that you sometimes get with tinned.
Yeh, I know that adding a small amount of sugar helps to get 'round the acidity problem, but tomatoes used in the preparation of passata tend to be riper/sweeter anyway.

Good luck with finding it. You won't be disappointed if you do use it in place of tinned toms, etc

ps I am a vegetarian and all the passata I use is too
