we also use curry powder.... my favorite out of all these are saffron and cardamom.. what are your favorite spices? I use basil,curry,saffron,& sumac. My favorites are basil and rosemary. i like using ancho chile powder, fresh garlic, ginger, salt & pepper(duh), cayenne pepper, and if its going to be grilled i will use chipotle powder because it takes too much like BBQ to use in other stuff all of thim . I couldn't imagine life without garlic or Thai Peppers. I make a heck of a great Spicy Szechuan Eggplant that uses both. I like using cayane, chili powder, garlic, paprika, cinnamon, allspice, pepper, and a mixed cajun seasoning that I have. Anything spicy really. Favorites are fresh basil, oregano, thyme, rosemary, cilantro, cumin, chives, and tarragon. I use those the most! I tend to keep it simple for regular cooking- black pepper, basil, oregano, thyme, tarragon, cayenne and rosemary. I learned to cook from my uncle, who was a master chef and specialized in French, Italian, Spanish and some Portuguese cuisine, especially regional dishes. He had a special pantry for herbs and spices and dried his own. He told me only keep what you use daily, buy fresh when you can and don't overwhelm a dish with spice its as bad as none at all.
I always keep black and red pepper, oregano, parsley(flat), sage, rosemary, thyme, garlic, bay, allspice, cinnomon, nutmeg, basil, cayenne, paprika on and on. If it's out there, I either have cooked with it or probably will. I used whatever the dish calls for. I use seasoning salt, pepper, and lemon pepper seasoning! ANYTHING AND EVERYTHING I can get my hands on!

I LOVE to raid the discount bin when spices go on sale at the grocery store because then I get really expensive and odd spices for cheep and I can experiment to my heart's content!

Curry, turmeric, coriander, habenaro chili powder, cardamom, and 50 other's that I can't remember off hand!

The best thing is when you open a new jar of a spice you might never have even heard of and just sniff, taste, and use!

You would be shocked how many great recipes I have come up with because I didn't look up what the spices are "supposed to" be used in.

Just experiment and you will make some spectacular dishes! I have used all those you have used, I also like cumin for spicy dishes and fresh black pepper seeds, cloves, fennel and fenugreek seeds, priprika , chilli powder and I have several others kind I use for seasoning breads too such as sesame seeds. Herbs includes parsley, coriander, thyme, rosemary,bay leaf, oregano and bouguet garnis packets. I know quite a bit about spices as I can make my own from scratch too.
