I am familiar with Sunnyside up, and I know how to cook eggs... It was an explanation of the term I needed... Here in Oz we call it Sunnyside down. Still runny, but no albumen. Can also be achieved by cooking over very low heat, with a lid over the pan Strange world we live in huh?

Thankyou all... As I said in my previous edit 2 hours ago... I get it now!!! there is one way u want yr egg to be over easy is one of them.
Over Easy: The egg is flipped briefly. The yolk does not stand out as strikingly, but is still liquid. The white is no longer liquid.
Other beside Over Easy u got
*Sunny-Side Up: The egg is never flipped. The yolk is a bright yellow hemisphere sitting in the middle of the pristine white. The yolk is liquid, and some of the white around the yolk may have a jelly-like consistency.
*Over Meduim: The white is cooked to a firmer texture, and the yolk is solid around the edges, and oozy in the middle.
*Over Hard: The white is firm, the yolk is a lighter color and flakey. its like sunny side up, but with the yoke covered up with the white part.... done on one side, flipped, but yolk runny. maccas eggs are the best. i love sunny side up. I don't know if you are familiar with sunny side up, but it's similar to that. The only difference is that when you are about done with one side you simply flip it over with out breaking the yolk and only let it cook for a short enough time to give the now underside a more cooked layer without completely cooking it.
I hope this answers your questions and if you're going to try it good luck because it takes delicate skills to do it without breaking the yolk. For sunny-side up eggs, melt 1 tablespoons of butter in a 8-inch non-stick omelet pan or skillet over medium heat. Break open eggs into pan and immediately reduce heat to low. Cook slowly until the whites are completely set and the yolks begins to thicken, but are not hard.
For over Eggs over easy flip over for 15 seconds.
For eggs over hard cook until yolk is cooked. Eggs over easy means fried till white is cooked on bottom of egg, then egg is flipeed over just long enough to thouroughly cook the white only and leaving the yolk soft and runny...my favorite for soaking my pancakes or toast with... It is that mask again. It means that you fry the buggers as they land in the pan. Then you take a device called an egg slide (Australian) and turn them over slowly as to not break them.
They are then served with Toast and a VB Stubbie.
WOW Mystic makes you want to eat Breakfast. Over easy= fried or grilled, soft in the middle.
Over medium= same, semi-soft in the middle.
Over hard= same, well-done thru & thru. Good question, I've always wanted to know this!
