Is ot ok to freeze vegetables?!

Question:

Is ot ok to freeze vegetables?

Such as onions, tomatoes, and peppers? They are in freezer bags. Will they still have all the nutirents? Will they still taste fresh?

Answers: Most veggies need to be cooked a bit before freezing (blanched). Otherwise they turn to complete mush.

They do retain most of their vitamins. In fact, often commercially frozen veggies will have higher vitamin content than fresh veggies because they are frozen so soon after picking. Lots of supermarket veggies have been sitting around for a long time.

Here's more info about blanching and which veggies freeze well. http://www.ag.ndsu.edu/pubs/yf/foods/he1... they lose the texture and some of the taste. Veg with high water content go mushy when thawed, best to use in soups and stews, should keep nutrients though.
