Those fruit bearing trees are just getting same nutrients and minerals needed from the soil though when you plant them in the same soil they have different taste, but when you taste the soil it is not sour nor sweet nor bitter etc....

It is just genetics. It is what the instructions from the genes have told the plant to do with the minerals, metals and nutrients.
You are correct in thinking that soil and water affect the plant. That is why oranges grown in Orlando, FL taste a little different than the same variety of orange that is grown in Fresno, CA. But it is the genetic instructions that cause it to be that type of orange. it isnt the soil that gives the flavor,its the variety all three have the different chemical composition which would naturally act different ways in your taste buds.
