My favorite omelette filling has to have onions, tomatoes, a little bit of ham and serrano chilli peppers. Don't forget the coffee on the side!

Chorizo is so yummy! Onions, cheese, and susage cheese, onion and bits of bacon stilton. Steak, mushroom, with pepper jack! just plain cheese and lots of it OMELETS do not have fillings I like chicken and mushroom. Sometimes with spring onion added too.
