It means to pick separate items rather than a specific set of an entree and two vegetables... means to get something by itself so ordering one egg at a resturaunt instead of the egg platter would be ordering and egg ala carte just a little something extra alone, or by itself Ala carte is french and it means "from the menu". They use it at restaurants and other plaes that serve food to make it sound more fancy. To have dinner without the sides... Such as, my favorite food is Mexican... If the menu has a dish with tacos, beans and rice, and I only want tacos, I would order it Alacarte I think the actual words mean "off the menu" but I may be wrong.

this is one way to order. the other way which isnt found in all restaurants is choosing you dishes from the 'open buffet', which means you can eat all you can without limits as long as it is taken from the buffet, ie, the table on which all kinds of food are displayed. on the side or alone like one of something when your ordering food. an enchalada ala carte means one enchalada on the side :P
