(cooking for more people than usual) Frozen meat can last a good 3-6 months, depending on the meat. As for your other question.. it really depends on the size of burgers you want to make. For good filling burgers, use a 1/2 pound per person, or 4 pounds. For a nice satisfying burger, use about 5 ounces per burger, or about three burgers per pound. yes, it should be fine. Yeap still good. It will last indefinitely in freezer when wrapped properly so it doesn't get freezer burn. Yes it is. :-) You can freeze your meats for about 3-6 months I believe before they go bad. You can ask your butcher at your favorite grocery store what they advise on the timeline and go from there. But with your meat being in the freezer for under a month, it's still good. :-) If you had it wrapped up well in aluminum foil, etc. It should be fine. But always check the coloring, and the smell of it after it thaws. If you are "suspicious" of it, throw it out ! Not worth getting sick (i.e. food poisoning) over. Meat, properly wrapped will last in your standard refrigerator freezer compartment 3-6 months. It will last 12 months in a separate sub-zero freezer. Odds are at little under a month, your meat is still good. For feeding eight people, if you are making 1/4 lb burgers, then you need two pound of ground beef. Adjust for larger burgers or if you expect your guests will want seconds. i agree with everyone's view of the time line for meat in the freezer. The math for burgers has been mentioned, but we do not know if you add anything to your meat before shaping your burgers.
I throw in whatever i feel like at the time....oatmeal/bread crumbs, egg, seasonongs, bbq sauce etc.
So by adding to your meat, it is tasty (my burgers are best) and does stretch the meat. I think so Good answers from all. Just a couple additions....
1) Providing the meat was fresh when frozen, you're fine. (I've heard of some people who freeze "questionable" meat under the belief that freezing kills the bacteria and takes away the taste of meat on-the-verge.)
2) 1/4 pound patty per person (two pounds for eight people) is on the mark...unless you have hamburger that has a high fat content, meaning the burgs will shrink considerably when cooked. If you're unsure of the fat content, bulking it up with stale bread crumbs or rolled oats that you pulverize in a blender will help keep the size by absorbing fat while it stretches out the quantity of the meat a little--without your guests thinking that you've added something while at the same time you haven't turned a hamburger into something else (seasoned beef patties, meatballs, etc.).
