Serve with Red Lion ale. use a sturdy, hearty bread that has flavor enough to stand up to the roast beef- i like a good ciabatta roll
use beef that is slow roasted and tender- make sure to cut it cross grain to enhance the tenderness.
in addition to the meat and bread, i would reccomend a smoked provolone cheese, also sliced thin

For me has to be freshly cut beef that is cold but slightly rare. In a medium sized wholemeal baguette accompanied by rocket / salad, few peanuts, and horseradish. Then a touch of salt and pepper. i cant believe you gonna put ii in a sandwich , what a waste This is really a subjective question, but as for commercial beef sandiches I tried the Rueben at Penn Station and it was delicious. The Prime Rib sandwich offered by Quizno's is very good as well. Try it and see what you think if you are in the U.S. If cold I like it with a sprinkle of salt and maybe some mustard in a bread roll
If hot I like it in a baguette with rocket and fried onions. i quite like getting my teeth into my wife's beef curtains! the beef has to be cold and english mustard no point overcomplicating an allready perfect sarnie I take a stack of fresh thinly sliced roast beef, and put it on a piece of waxed paper. Then, I place a canned green chili and monterey jack cheese on top of the beef, heat in the microwave until the cheese melts. I take a warmed sour dough roll, split it in two, add mayo, then slide the warmed roast beef into the roll. I sometimes add lettuce and tomato.
Serve with seasoned curly fries, chips or whatever I have on hand. It goes great with a beer or a cold can of soda. crusty cobb slice in half, dip cobb in hot onion gravy, sliced roast potato spread on cobb, add sliced hot roast beef& serve hot roast beef lashingsof caramelized onions horseradish and english mustard on crusty white bread lots of english mustard!!
