Answers: it is completly safe. i work in a resturant an d it is safe (we asked a health inspector) to cut the mold off of a block of cheese then still use the cheese Yes! I hope it is ok because I do that all the time. Yes, I have done it for years. Some cheeses are actually aged that way. Well Daycare's and Public School's in Washington State are not allowed to cut off the moldy parts and throw them away, while using the rest of the cheese.....but I still do it and the cheese tastes just fine yes It depends on the mould. many cheeses, like brie and camembert, have natural while moulds that are edible and delicious. Most blueish and furry moulds are not and need be cut off. On a hard cheese, yes. As long as you don't cut right after the mold - take a little un-moldy too.
On soft and semi-soft - NO.
