I think you mean smoking point?

coconut oil is good at high heat...its my fav really.

refined avocado oil is capable of getting hotter (about 570)

Smoking point is relative to where the hydro-and the carbon of a hydrocarbon molecule begin to separate...at which point it becomes unstable....

or did you mean high enviorment temperatures?

Olive oil is great for you, but unfortunately, it does go rancid. Quite easily in fact. Store in a dark cool place and try not to heat it too much.

The best oil that is least likely to go rancid is grapeseed. All the best chefs use it in their high heat cooking. Chef Jean Georges was the one who opened my eyes to it first. He is truly the master.
