Eggs are usually dispatched within a week from the egg packing factory.....they won't hatch because they haven't been fertilised...no old roosters there!

They are onlt days old when processed and sold to supermarkets.

They don't hatch until birth, is that your question.
The sooner the better of course.

But you don't have to worry if they are properly cooled. When I was in teh Navy in the 1970's our submarine would go on partol in the North Atlantic ocean up by the artic circle. We stored cases of fresh eggs in the torpeado room beside the hull outboard of the tubes. It was really cool there in the artic waters. Our eggs would keep fresh for a couple of months...

Everyone was sad when they ran out because the powdered ones were really bad!
