Puffy Omelet with Ham Filling
Ingredients
-4 eggs separated
- 1 cup Ham (6 ounces) cut into thin strips
- 1/4 cup shredded cheddar cheese
- 1/2 teaspoon dried basil leaves divided
- 1/4 teaspoon white pepper
- 1 tablespoon 2 teaspoons butter or margarine divided
- 1/2 cup sliced fresh mushrooms
- 1/4 cup chopped green bell pepper
- 1 large tomato peeled seeded and chopped
Directions
Heat oven to 350°F. Beat egg whites until stiff peaks form; set aside. Beat egg yolks until thick and lemon-colored. Stir in ham, cheese, 1/4 teaspoon basil, and white pepper. Fold yolk mixture into egg whites. In large skillet, with oven-proof handle, heat 2 teaspoons butter over medium heat until hot. Spoon egg mixture into skillet, gently smoothing surface. Reduce heat to low. Cook 7 to 8 minutes or until bottom is golden. Place egg mixture in oven and bake 10 to 12 minutes or until knife inserted near center comes out clean. Meanwhile, in skillet over medium heat, cook mushrooms and bell pepper in remaining butter about 3 minutes or until tender. Add remaining basil and tomato. Cook, stirring occasionally, an additional 5 minutes. Loosen sides of omelet with spatula. Make a shallow cut across omelet, cutting slightly off-center. Spoon mushroom filling over larger half. Gently slide omelet from skillet, onto warm serving platter, folding the smaller portion of omelet over the larger half.

how about something simple? provolone and pesto. yumm. wanna empty the frig into an omelet? may i suggest fritata? these are heavy and lend well to lots of ingredients.

no i prefer milk and corn flakes. or a cup pf coffee or a hot chocolate with taste of strawberries and a croissant or a toast.

Most popular omelet ingredients are tomatoes, cheese, ham, onion, green bell pepper, jalapeno pepper, and mushroom. I once tried leftover mashed potatoes and it was very good. On my next trip, I went to a restaurant and lo and behold they had potatoes as a choice for fillings. I usually add whatever meat I have available, like bacon, ham, bologna, or chili. I usually top them with picante sauce.
As far as technique, I saw the Army cooks let it firm up a little before adding ingredients and then they would fold one third over, then fold that double section over onto the last section. If you try to fold the third section over instead, it does not seem to stay.

Any veggie, sauted in a little olive oil or butter with some herbs and then cheese makes a perfect omelette filling.
