What about making like a baked potato pancake? I'm sure it could be done, and it would go good with something like pork chops or lamb.

hash browns are good with herbs, shredded cheese, and ground beef. put some sour cream on the side YUMMY!!!!!

maybe add them to a casserole. make breakfast burritos. deep fry them and use them to top burgers..........

I like to scramble up some eggs and add what ever cheese,ham,onion etc.. Pour over your cooked hash brown and bake. YUMMY!!!

Try using them as a base for a strata. After lightly browning them in a skillet, press them into a buttered casserole dish. Meanwhile, whip up a few eggs. Toss in some chopped onion, mushrooms, spinach, cheese...whatever you like. Pour over the hash browns and bake at 350, until the eggs have set. Simple,easy and good !
