Blue cheese?!


Question: I was wondering if anyone knows of a brand of blue cheese that has a lot of the blue mold veins in it. I tend to eat the more heavily molded/veined parts of the cheese so I was actually wondering if any brand goes a little heavy on it when they make the cheese. Thanx.

Stilton is generally considered to be the best of the blue cheeses. However, if you want something sharper, make your own blue cheese and simply age it longer. The longer you age it, the sharper it becomes, and the more mold there will be in the finished cheese. There is a fairly simple method of making blue cheese at home on the following site:

For your mold culture, an inoculum of Penicillium from a cheese you are duplicating is added to the curd. So, if you have a blue cheese you particularly enjoy, you may use it to 'seed' your home made cheese. Then you can age it to your taste. The older the cheese, the more mold, and the sharper the taste.

I like the fact that I found someone besides myself that actually likes blue cheese :)
Roquefort, Gorgonzola, Stilton, Maytag
I think that Stilton is one of the more pungent blue cheeses.
