Bringing canned fish to the breakfast table?!
Answers: What's the best way to incorporate canned tuna or other fish into my breakfast regime? What about when entertaining?
SALMON OR TUNA QUICHE
1 (15 1/2 oz.) can salmon or 1 (12 1/2 oz.) can tuna in water
Drain and reserve liquid to 1/2 cup. 1 c. sour cream or plain yogurt 1/4 c. mayonnaise or salad dressing 1 tbsp. grated onion 1/2 c. shredded sharp cheddar cheese 1/4 tsp. dill weed 3 drops bottled hot pepper sauce
Blend eggs, yogurt, mayonnaise, and water (reserved liquid). Add tuna, cheese, onion, dill weed and hot sauce. Spoon filling into crust and sprinkle with reserved mixture from crust. Bake at 325 degrees for 45 minutes or until firm in center.
QUICHE CRUST:
1 c. whole wheat flour
2/3 c. shredded sharp cheddar cheese
1/4 c. fine chopped almonds
1/2 tsp. salt
1/4 tsp. paprika
Combine above. Stir in 6 tablespoons corn oil. Set aside 1/2 cup of mixture to sprinkle on top. Press into quiche pan and bake at 400 degrees for 10 minutes.

Entertaining- good tuna salad and cracker are good (as long as you keep the salad on ice so that it doesn't go bad). Mini tuna quiches are also good.
As far as the breakfast food- the only thing that remotely resembles breakfast food is tuna quiche, but it's not diet food at all.
Why do you have to have it for breakfast, there's lunch and dinner. Fish is such a strong smell and taste for the morning. I like quiche and love fish but would never serve it for breakfast. Try salmon patties, salmon loaf, tuna salad for sandwiches and to add to lettuce salads, baked fish, parmesan Halibut (flour, egg, grated parmesan cheese in that order and fry to cook fish and crisp all sides). I have an excellent recipe for smoked salmon patties I'll give you if you want; just email me.
I love smoked salmon...you could make little sandwiches out of them or serve it with salad.
