They say rhubarb is not good to eat after the middle of the summer. Is this true? Hate to see it go to waste.?!


Question: it is good until freeze up. Sometimes as the fall approaches it will get more bitter. Just add a bit more sugar and boil or bake longer. Never a bad time for rhubarb.

Thats not true ,if its red and crisp then your good to go ..
It' not that it's not good to eat, it's that at the end of the summer it has been in bloom long enough that it has started to go to seed and if you eat it, you may not like the consistence of it. It will be more stringy.

It won't hurt you, there is nothing wrong with eating it if you like it that way. I usually just stew it and put it into mason jars and eat it all year.
