Why don't Italians put their eggs in the fridge?!
Answers: This bothered me while living over there, their eggs are just laying out on a shelf at the super mercato. When I got home, I put them in the fridge and the maid always said we were crazy. How long can you leave eggs out at room temp before they go bad? And when you have them just above freezing? Is there any sense to this?
Eggs age more in one day at room temperature than in one week in the refrigerator. "You can actually store fresh eggs at room temperature for about a week. If you store them in the refrigerator, you can keep them there for as long as 6-8 weeks before they become "old".
Gather eggs daily, and store them in a cool place with the
small end of the egg pointing down. Discard any cracked eggs.
Interestingly enough, the fresher they are, the worse they boil. The white of a fresh egg will stick to the shell when boiled, and can be difficult to peel due to the high moisture content. The eggs boil best if aged for about two weeks. At this point there is less moisture in the egg, and they can be peeled much more easily!"
Inappropriate temperature and humidity will age an egg. (A week-old egg can actually be fresher than a day-old egg.) In the U.S. eggs are refrigerated but in other parts of the world they are not. They will keep fresh out of the refrigerator if never placed in cold. Once they are refrigerated, they must always be refrigerated to maintain freshness.
