i had a salsbury steak tv dinner and a pepsi
Bratwurst, sauerkraut, and potatoes. I attended an Oktoberfest party.
My husband grilled steaks and corn on the cob.

Homemade Vegetable Beef Soup and Diet Coke. Which is actually pretty good for me cause it's usually cereal.
Balsamic Chicken Strips

6 ounces potato
4 ounces boneless, skinless chicken
2 tablespoons balsamic salad dressing
2 tablespoons flour
1 tablespoon Italian bread crumbs
1 dash pepper
2 ounces zucchini
2 ounces yellow crookneck squash
1 ounce onion
1 teaspoon olive oil
1 teaspoon Italian salad dressing
1 pinch pepper
1 pinch dried basil
1 teaspoon milk
1/2 tablespoon butter or margarine
olive oil to cover the bottom of your skillet


Directions


Peel potatoes and cut into cubes. Place in a saucepan and cover with water. Heat until boiling, turn heat to low and cover.


Slice chicken into strips. Place in a shallow pan and cover with balsamic dressing.


Pour flour, Italian bread crumbs and pepper together in a plastic bag. Shake to blend.


Slice zucchini and crookneck squash. Pour olive oil into a non-stick skillet, add squash and turn heat on to medium-low. Pour Italian salad dressing over squash and sprinkle with pepper and basil.
Cover the bottom of a skillet (an electric skillet works well) with olive oil. Turn on heat to medium-high (350 degrees) and heat until a drop of water will sizzle when dropped into oil.

Remove chicken strips from pan with balsamic dressing and shake in flour mixture.

Place in hot oil and cook for about 5 minutes or until first side is golden brown.
While chicken cooks, slice onion. Turn squash and add the onion. Turn heat up to medium.

Turn chicken, reduce heat to medium (250 degrees) and cover pan.

Drain potatoes and place in a mixing bowl. Add milk and beat with an electric mixer until smooth. Cover to keep warm.
Turn squash once more.
Remove cover from chicken and return heat to medium-high for another 30 seconds to 1 minute or until golden and crispy.

Remove chicken from oil and drain on paper towels. Serve potatoes topped with butter or margarine and squash with chicken strips.
Mmm, chilli. =]

your dinner sounds way better than what i cooked. we had beef liver sauteed in onions with mashed potatoes on side. (i'll eat liver, ONLY if after it's cooked i can drown it in garlic powder and ketchup)
well it was last night (Australia) and we had braised lamb's brains on toast
Chocolate cake w/ chocolate icing sounds really good right now! I had 2 waffles with just a little dab of butter, covered with warm Maple Syrup. Oh, and a large glass of milk!
Beef Teriyaki and rice
Leftover "unstuffed peppers", which is peppers, onions, ground beef & sausage with rice in tomato sauce, all mixed up, and one of our homegrown sweet potatoes, with lots of butter.
last night i had homemade meatball subs!
