Answers: When I was a kid, my grandad used to feed me all kinds of stuff that I never figured out until I was older. I didn't realize that tongue was really a steer's tongue and oxtail is really a tail. One thing he cooked a lot and I did like was cod cheeks. How does a cod have cheeks though?
It *is* harvested from the heads of codfish.
These bite-sized medallions of cod are firmer and far more elastic than fish fillets, and, therefore excellent for stir fries and curries as they don't break up during the cooking process.
They are considered delicacies, as as cod loins. I never heard of cod loins, either.
Growing up on a midwestern farm, we butchered cattle and swine on the kitchen table, and I ended up eating a lot of strange things that most people have never considered. On my first date with my current wife, I took her to Kissner's, a working man's bar/restaurant in Defiance, Ohio, and ordered her a brain sandwich. Just what it sounds like. It is a small, very tasty, tender peice of meat on the head between the corner of the mouth and the gill of any fish, not just cod. It is so small that it is only worth saving on quite large fish, though.
