Yes, its better to make your own then you control the salt and flavorings (such as simulated smoke). The main problem with commercially made jerky is the HIGH amount of sodium.
I was going to answer that it's REALLY bad for you until I read that you wanted to make your own.
The stuff you buy is HORRIBLE. Way too much sodium, chemical flavourings, MSG, preservatives, aftificial colours, etc. BUT if you're going to make it yourself you can simply choose to use reasonable amounts of salt, and stick with real spices and flavourings, and obviously skip the artificial colour and the preservatives.
Go for it, it will only be as bad for you as what you put in it.
