What to pack him for lunch?!


Question: My boyfriend recently started working a job that requires him to pack a lunch. He turned to me for ideas, which resulted in me making him lettuce and tomato ranch wraps...for the last month.

I want something different to make him, that is healthy and that is ALL VEGETARIAN. We both do not eat meat, which makes making a conventional quick lunch a bit hard.

a salad with: greens, shredded carrots, tofu cubes, dried cranberries, and either almonds or candied pecans. you can add a little bleu cheese if you are not vegan?

a garden burger on toast with sprouts, tomato, vege cheese slice and whatever condiments you like

pasta with tofu and veges -- you can make a cold pasta salad or a warm one. peanut sauce is a great way to pull the whole thing together.

stir fry veges and tofu or tempeh with garlic, ginger and either soy sauce or braggs amino acids. serve over brown rice or quinoia

pack snacks too with good protein like nuts, yogurt (if you don't do dairy, there are some good soy yogurts), cheese or soy cheese, apples with peanut or almond butter

black beans mixed with 'gimme lean' which is a vegetarian faux meat, add cumin, garlic salt and onions, roll in a whole wheat tortilla...you can add salsa, vege cheese, cilantro, avocado, lettuce, tomato, and throw in a couple lime wedges to squeeze over it just before eating...highly tasty

tofu salad sandwhich...mix up tofu (firm) with salad dressing, shredded carrots, celery if you like it, mushroom, whatever you like (be sure to drain the tofu first), then put is on toast or you can serve it in a bowl with bread or crackers on the side.

enjoy! hope some of these work for you...i pack my husband's lunch often and though he's not a vegetarian i try to cut out meat whenever i can! all of these lunches have gone over well, are pretty well balanced in terms of carbs and protein, and are filling.

If he has access to a microwave, casseroles travel very well and are usually delicious the next day. My husband always enjoyed leftover lunches.

a couple of carrots, a banana, a peanut butter and jam sandwich. a container of spicy beans with butter bread.

There are now a lot of itms that resemble meat priducts that are good as in tghe 'Boca' line meals.. They have 'chicken' fingers, 'burritos', 'veggie burgers' 'spaghetti', chili, lagsnana, and a lot of things like that.. For any meat meals, tofu is a great substitute also...

no meat that no fun ;-)
just get tufu!

Soy burgers and chicken patties are vegan. Also salads are always a good choice, you can add mushrooms,peppers,tomatoes, etc.

Well if you still eat fish then theres always tuna and salmon sandwiches which are extremely healthy and fish like salmon should definitly be in everybodys diet (I thought everyone knew that by now) or how about a marinated mixed bean salad which you can buy at the local deli or right out of the can and throw in a whole wheat pita with some hummous? you could also try checking out some healthy recipe sites for ideas i can't think of any at the moment but my wife has a whole bunch and you just need to search around a bit and it will be easy to find

try fruit salads. mix in all kinds of fruits strawberries, banana, mango, kiwi, coconut, watermelon. with like a creamy toping, my mom makes it but i dont remember what she uses. i think its like sour cream and some sugar to make it sweet but sorry i cant remember everything else.
