Why is caviar so expensive?!
Answers: First off it taste like you know what. Second of all it's like what 50, 60 dollars a can. Who would want to buy that?

Caviar is expensive due to its limited supply (70 metric tonnes per year) outstripped by constantly increasing demand, and elaborate time-consuming technique of production.
I have purchased it for around $40 and used it on my crabmeat deviled eggs as garnish.
The means to produce it make it so it requires, plus the fish you get it from are becoming endangered.
It is very time consuming and labor intensive to harvest.

There are various kinds of caviar. The most expensive is Russian caviar from a species of sturgeon found in Russia. Its harvested in Russia and processed in Russia.
Due to the fact it IS a matter of supply and demand, EVERYONE [the harvesters, processors, jobbers, dealers, "middle men" and distributors] wants their "piece of the action". EVERYONE ADDS their bit of the cost of harvesting, handling, processing, shipping, distribution and profit to the cost of the raw natural resource. Those folks KNOW there are folks on the other end who KNOW and appreciate THE VERY BEST AND ARE willing to pay for it!
Are there less-expensive kinds of "caviar" on the market? Oh yes! BUT, nothing compares to the taste of the true golden caviar from Russian sturgeon.
Believe it or not, some domestic processors use some domestic fish, harvesting the roe [the eggs], process it and mix it with processed charcoal and call it "caviar". Many, many folks just don't know the difference or don't care to know the difference.
