How long do portabella mushrooms caps last in the fridge?!


Question: They are the kind that come in a foam/saran-wrap type package. There is no date on them. And what's the worst thing that can happen if you cook and eat them when they're "too old"?

Here's what I've heard - Rachael Ray said the following about mushrooms:
1. They will last quite a long time, especially if they are sealed and no water has touched them.
2. As long as there is no mold, weird growths or smells, they are fine.
3. As they age, the tend to "dry out" which is not bad. It just intensifies the flavor.

I must sound like a geek using a Rachael Rayism (she's not even one of my favorites), but the mushroom thing seemed to make sense.
