Potatoes question?!


Question: I am making homefries for the first time and I am getting ready to go grocery shopping. From what I have seen in the past there are a bunch of different type of potatoes: red, russets, Idaho etc etc Whats the difference in them and does it really matter which one I get? thanks

I'd recommend using (Idaho) russets. Russets cook up softer and fluffier in the center.

Red potatoes, yukon gold and new potatoes cook up firmer and not as fluffy and soft.

I use Russetts in almost all my potato recipes. Red potatoes are used for specialty dishes here.

well there is a difference in texture but i find presentation-wise, using reds will always impress! of course you'll have to keep the skin on, just scrub clean.

They go into two main groups Waxy potato's and floury potato's.

I always use Russets. Be sure to fry them in bacon drippings for best taste. That is how all good hillbillies cook them.

I use Idho potatoes and they taste better than red russets,and it does matter which one.
