I am not wise enough to understand let alone explain the mysteries of the inner sanctum of the Crunchie bar sosgez.
But at a guess it's the little critters that worm their way in from the outside getting fatter as they go and therefore making bigger holes.
When you are making cinder toffee which is basically what the middle of a Crunchie is, you boil up a sugar and syrup mixture until it is extremely hot and while it is bubbling away you add Bicarbonate of Soda, which has the effect of making the mixture froth and foam. The outside of the mixture has the larger bubbles and in the middle are the denser, more compact bubbles because that is where it is hottest.
