What Is The Difference Between Jam & Marmalade?!


Question: I am a former chef from Canada and while most commonly the answers you got are correct, a jam is usually made with fruit or veg and thicken with pectin or ascorbic acid (there the same), and while true marmalade is made from the juice and peels of citrus fruits most often and is thicken to with the same agents as jam.

But, I have made tomato jam and onion marmalade in my restaurant days, veg can be made into both, the Indian "chutney" is like a jam or marmalade as it is made from both fruits and veg, spices and cooked down until thick, I have even made my own ketchup and it could be termed a jam.

As Far as I know, marmalade always has the peel of the fruit used in its making, where as Jam is the pureed fruit extract. Also Preserves which includes the whole or chopped fruit in the making.

jam is fruit and sugar and marmaldade is fruit, it's peelings and sugar

marmelade is strictly citrus only... orange to be precise. So breakfast marmelade is orange 'jam' containing peel. All others are jams.

the only diference i know of is that Marmalade is usually made of oranges(including some peel,if desired) Limes and Lemons can also be used.i have lime marmalade in my fridge!
