In the event of a nuclear war the areas surrounding most major cities in the U.S. will sustain significant nuclear fallout. The fallout patters will spread across the U.S. as they enter the jet stream and casualties will increase.
Your safest bet is to head south into Mexico to escape the bulk of the heat and radiation effects. There are no significant military targets south of the United States and no nuclear assets.
If you stay here you will die... canned food or not.
In 30 or so years once the radiation from the war has deteriorated to a point that life can once again survive outside, your canned food would no longer be good...
In case of a nuclear war... well by the time you need to eat your saved canned goods, you will be just as dead as the rest of us because if they are exposed to fallout, then so are you.
