Question: I am a former chef and the answer to your question is "yes", in the grocery store and fresh fish markets there is something called "Skate Wings", they are flat and have small cartilige type noids in them, they look like bones but are not solid.

You first wash them to rid any odors, dip them in seasoned flour and fry them in a mix of butter and oil, to serve most places that have them do a beurre noisette, a brown butter with capers, lemon juice and fresh parsley, this is also known as a meniure, they can be done with the butter, lemon and parsley.

They are very light tasting like sole or halibut, not alot of flesh on them and are relatively inexpensive, it is just finding them, a good Italian or Greek fish market is your best bet.
