Can you leave cooked white rice out of the refridearator until the next day and eat it?!

Sure you can, but don't eat it. There's a lovely little thing that's called Bacillus Cereus. It grows VERY fast in any kind of cooked grains or rice left out even for a little while. And it's not pleasant. Not unless you like barfing, cramps, diarrhea, and generally being sick for a couple days.

I have personally left rice out overnight and never had a problem with it as long as it was not extremely hot in the kitchen.

It is probably okay.

I put mine in the fridge, and the next day, add a dribble of water to the container and re-heat (covered) allowing the grains to steam up and regain their moisture.. fried rice is usually made with day old rice (from the fridge)!

You shouldn't. Re-heating the same rice more than once is a BIG mistake because then it goes really bad.
