How come ice cream is always easy to scoop the first time you scoop?!

cuz when you first get it it's all even and at the top and when you put the scooper in it it melts the ice cream a bit on top, so when you put it back in the freezer that top layer freezes harder than before.

The scoop gets cold;-{ dip it in water between servings.

If you dip the spoon or ice cream scoop into water it makes it easier. I think it might be the freezing and refreezing that makes it hard.

the scoop is warm then. Haven't you seen how people behind the counter at an ice cream store will always dip the scoop into water before each scoop? That is to warm it up again.
