1/2 cup dark beer
1/2 cup seltzer water or club soda
1 tablespoon oil
1 egg white
1/2 teaspoon cayenne pepper
1 teaspoon kosher or sea salt
1 cup Wondra or pastry flour
1/4 teaspoon mustard powder
1/2 teaspoon onion powder
Pour beer and seltzer water or soda into the bowl of a blender or food processor (or a stick blender can be used). Sprinkle in pepper, mustard, salt and onion powder and oil. Pulse until combined. Add flour last, and process only until mixed. Batter may still be slightly lumpy, but almost smooth. If too pasty, add a teaspoon of water at a time until mixture has the consistency of a pancake batter.
Whisk egg white until frothy in a shallow bowl. Gently stir in contents of food processor, mixing until combined.

Ingredients
120g/4oz plain flour
pinch of salt
2 eggs
210ml/7fl oz milk
90ml/3fl oz water
1 tbsp vegetable oil
Method
1. Put the flour and the salt in a bowl and mix.
2. Make a well in the centre and crack in the eggs.
3. In a separate bowl mix together the milk and the water.
4. Beat the eggs into the flour with a wooden spoon and gradually beat in the milk and water mixture to get a smooth liquid the consistency of cream.

My mother used to say the cheapest mix makes the best batter and I can see little wrong in her philosophy
Fundamentally The batter mix is the same as for Yorkshire puddings only it is a little thicker
i:e Plain Flower, milk, an egg and salt and pepper to taste.
Mix all together then when the mix pyramids when you lift the spoon out of the mass then your consistency is about right.
To thicken the mixture you can add nearly any ingredient you like although you will know if you add it in liquid form it will dilute the mixture. If you dilute too much you may have to add more flower
